Replacing eggs in baking can be done in a number of ways. A lot of egg-free recipes call for “flax eggs,” which are made with flax seed. I’m sensitive to flax seed so I can’t use those. Fruit puree (applesauce or prune puree) can be used to replace eggs in certain types of recipes, like sweet quick breads or brownies. But fruit puree can’t be used to replace eggs in everything because you can taste the flavor of the fruit in the finished product, and the fruit does not replace the leavening action of the eggs.
